I am staggered how far people drive on one trip, then I remember, I was once young !
If you are doing 500 mile round trips on a weekly basis @countrypete , you might consider it to be ‘challenging’. It is worth mentioning that I have never stopped for public charging, but I do stop for relaxing comfort breaks and charge the car at the same time. It’s making the best use of the stop. But if you are the kind of head down arse up driver and can not abide ‘wasting time’ on a long journey, I doubt you would be happy with a BEV.
Personally, I do not miss going to a petrol station and I enjoy knowing my car is charged up at home overnight on cheap electric is perfect. That is feature alone negates any extra duration on a long trip for us.

I drive in and can still cock it up! My wife thinks I part on a jaunty angle just to wind her up. But it is just incompetence!!
A problem with reversing in is the bollards end up stopping easy access to the boot and stowed wheelchair.

I think it is great when nice cars come onto the scheme.
I’d have a look just for the boot size alone, although I agree with @Glos-guy that it is no looker and a shame it’s entry level lacking any kit.
Also, the claimed combined of 41 MPG isn’t great either, giving it a range of about 450 miles and costing about £70 to fill up.
Despite the boot size, I doubt I’d have a look. Sorry.

I think the Cupra would fit your needs very well.
I do 160 mile round trips from Dumfries up to the central belt and have not had any issues any time of the year, and that was starting at 80%. We use a public charger about 40 miles away for a 10 minute splash and dash if we needed to. Used it when I had the 58kWh ID3 . Not used it since the bigger battery Enyaq.
Have a look at Zap Map as you think things through. It’ll give you plenty of choices of what is near you. Charging at home is just fantastic, fantastically convenient and fantastically cheap.

As @Glos-guy says, make sure they get the car MOT’s and in addition make sure they notify Motability of any motoring penalty points.

Be careful! You seem to be talking yourself in to an EV . . . are you mad?!
FWIW the Skoda Enyaq EV would win on the space front against most cars, if you ever need to carry a chair, you just might loose it in the boot!!

EV’s work best with charging at home. I’m sure you could manage public charging, but you would need to consider it carefully. That, in effect, eliminates the EV cars.
