I would put what you currently need and listen to what you were told by the adaptions centre you spoke with and add when/if ever required. The fact the DVLA might insist you to use hand controls as specified on your license, theres also the matter if you ever got pulled over by the police, would they expect them?
If your vehicle was ever off the road for sometime, Motability also offer a free taxi service you can call on when you need. Not the best but, at least you can still get out and about and not be stuck in.
