@kdwolf makes a great point re getting in and out of the car is massive for some people.
My MIL never had any problems getting in or out of our Nissan Qashqai, Ariya or their Leaf as the doors open to almost 90 degrees making access seemingly easier.
You could post that short list of cars that your mother has liked and let people on here comment if they have had any access issues.
