The wife always cooks the turkey, stuffing and some odds and ends on Christmas eve, our hob unfortunately is gas , however or oven is electric. The good news this morning the solar panel is actually producing enough power to cook the dinner basically for free, I know I am a sad person.
Unfortunately I have suffered a brain injury and occasionally I get confused and often say the wrong thing.

Turkey Crown to be cooked Christmas day, the pork will get cooked today to go along with the Turkey. The ham might get cooked to day ready for Monday to finish off in the oven. Its going to be a busy day today so as to minimise the load for Christmas day.

JojoeWe’ve got a beef joint, first time ever we’ve not had turkey, I’m going to miss it, nothing like grazing on turkey for 2-3 days, but Mrs Joe wanted a change as she’s not keen on turkey, so I had to go with the flow. We’ve got a 2.2 kilo joint and there’s only two of us this year. Think I’m gonna have the meat sweats!

The wife paid £16.00 for a small crown from Tesco’s she now wished she had brought a frozen crown from Iceland for £9.00, the Tesco crown is half bone etc.
You get what you pay for, the daughter buys her crown from M&S they have always been good quality hopefully it will taste alright.

I paid £36 for a 3.6Kg boned and rolled turkey breast/crown fresh, but have since frozen it after purchase. Got it from Asda as the farm shop I use is expensive this year.

AnonymousGenerally we don’t eat turkey for xmas, The mrs got a stuffed turkey joint from aldi and I picked up a whole leg of lamb from Tesco, as we usually do for Xmas because they half price and it cost £12.50 instead of £25 and we all love lamb.
This year we going to cook the leg in the 8l instant point duo, seal it on sauté then pressure cook it for 60/90 mins. 90mins pc is like 7 hours slow cooked and 60 mins is equivalent to 5.25 hrs, not decided yet on how long to cook it for and then maybe airfry it a bit to crisp it up more if needed.
We have done pork joints and chickens that way and they was amazing, so so tender, just have make sure you do a natural/slow release.
Mrs A to B Will basically do all xmas dinner except for the IP and we’ll all stay out of her way.
I’m looking forward to it already. Merry Christmas everyone.

December 30, 2022 at 10:17 am #203823I did finally try a Beef Wellington (amongst a few new variations for vegetables, like red cabbage with port, brussel sprouts with pancetta and honey roasted parsnips, as well as scottish “inspired” stuffing with whisky soaked apple) – got to say, i’m not sure whether or not i did something wrong, but not a huge fan of duxelles. Both pastry and duxelles kind of, for me, took away from what i consider one of the, if not the best cut of the moo.
But, wanted to try for 10 years, finally did it (and came out nicely medium, after around 300 checks with the thermometer), but for future meals i’ll just stick with a filet steak.
.. and there was no leftovers. 😀

My Dad used this method, and no doubt his Dad too and so on..
I enjoy it, will continue too as long as I can, don’t think it’s a hit with my off spring which is saddening in a way, however who’s to say in time the words will be…
don’t throw that left over veg out I’m going to try something just as I did with my first ever Christmas starting out in my new married life and home..

On the plus side it turned into a great curry with the aid of a variety of curry spices adding garlic, ginger, tamarind paste, brown sugar etc.

AnonymousMy gran used to cook a Panacalty and use the leftover meat and vegetables, oh how I miss her great old style cooking.
The xmas dinner we had was great, especially the lamb. It was so tender and we made the gravy from the juice in the pot from pressure cooking the lamb. The mrs when cutting it said there’s no need it just falls off so easy. We did stick it in the oven to brown it off for 10 or 15 mins as it was too big to sear it in the pan fully.
With the starter and huge main, was no room for desert?, so it’s still in the freezer. We’re going to have it on new years day.?

we had a Chinese style beef curry with the leftover beef Pops (large joint)..
oh yeah also turkey, stuffing, red current sauce in one side of stuffed pitta bread (or any bread) mayo in the other side..
Sounds awful tastes great, stole the idea from a Toby Calvary menu from a few years back..
After picking the turkey & duck bones our eagerly waiting dog did well too..?

Yeah dunno, after watching all the hype by Gordon Ramsay and his customers, i thought this would be a revelation or maybe the second coming – but nah, was okay, but in the end just took the meat out of its prison and ate it the way it’s supposed to be eaten – with no distractions.
And yes, the next filet will be with Diane or peppercorn sauce again.
