    Scotland has international sports teams which compete against other Countries, ergo all of those Countries recognise Scotland as a Country. This would include all 54 Commonwealth Countries, 208 FIFA countries, which is more than the total number of Countries in the UN.

    Why is Scotland not in the Olympics and only represents GB.

    The International Olympic Committee in general recognises only independent countries.

    In a lot of sports (especially football) the presence of separate England/Scotland/Wales teams is a historical anomaly, and would not be permitted if they were trying to join FIFA now. FIFA has stricter rules on who can join, and you have to be a sovereign state. This is to prevent e.g. Catalonia or Quebec trying to join FIFA as a separate entity.
