I’ve got Schwalbe Marathon Plus tyres on my e-bike, got them for puncture protection, didn’t want to be taking a rear motorised wheel off at the side of the road. They don’t have too much tread which means they less resistance on the road, they can be a bit skittish in the wet but not too bad. The tyre in the image below is actually deflated, I’ve not used the bike since last summer. A slick tyre on an e-bike should increase range.
