I did finally try a Beef Wellington (amongst a few new variations for vegetables, like red cabbage with port, brussel sprouts with pancetta and honey roasted parsnips, as well as scottish “inspired” stuffing with whisky soaked apple) – got to say, i’m not sure whether or not i did something wrong, but not a huge fan of duxelles. Both pastry and duxelles kind of, for me, took away from what i consider one of the, if not the best cut of the moo. But, wanted to try for 10 years, finally did it (and came out nicely medium, after around 300 checks with the thermometer), but for future meals i’ll just stick with a filet steak. .. and there was no leftovers.
not big on wellington myself.. a nice fillet is great tho. cooked right of course.. a diane sauce, spuds pref mashed and some green beans.. marvellous
