Hello and welcome @Amanda hugankiss
If you have not all ready, start here https://www.motability.co.uk/find-a-vehicle/cars/#search Enter details for car you are looking for. Once you have decided, there are links to dealers to follow up with. Check you local dearlerships that offer Motability scheme. Book an appointment with the motability sale person and arrange a test drive. Very important that last bit.
Regading how long it will take to get your car. How long is a piece of string! If dealership has the car you want in stock, maybe a few weeks. If not then it will be a factory order. That could take anywhere for 6 months or longer.
Out of the Juke and Mokka I would suggest that the juke is a better car, especially the hybrid.
Here are the available Nissan Jukes on the scheme for you to look at. https://www.motability.co.uk/find-a-vehicle/cars/search-results/nissan-juke/#sort=%40advancepaymentnumeric%20ascending%3B%40weeklyrentalnumeric%20ascending&f:@awardType=%5BPIP%5D&f:@makeName=%5BNissan%5D&f:@modelRangeBodyStyle=%5BJuke%5D
