I met a food technician a few years back, who was working on instant coffee. Apparently the challenge was to extract the coffee flavour from brewed coffee such that the coffee liquor became almost tasteless, keep the extracted flavour intact, then freeze dry the liquor before putting the flavour back. I wonder if she’s still working on it….
